    (1) 原材料要求说明                                                                

    本标准中涉及到的原材料主要是花生豆、水、酱油、食盐等。大豆必须符合                                                                

    gb/t8612和gb14932.1-2003标准,要求颗粒饱满、无霉变、无虫蛀、无杂质,                                                                

    并经过充分洗涤,农药残留应符合国家标准要求。食盐应符合gb5461-2000要求。                                                                

    不得在豆制品加工中使用非食用添加剂。水应符合相关卫生标准的要求。如使用                                                                

    的原辅材料为实施生产许可证管理的产品,必须选用获得生产许可证企业生产的                                                                

    合格产品。根据国家和行业标准的要求对原辅材料的技术要求做出了说明。                                                                

    (2) 检验规则说明                                                                

    检验一般包括出厂检验和型式检验。本标准在制定时参照豆类发证检验及审查                                                                

    细则的相关要求,对涉及食品安全的指标严格把关。出厂检验要求每批产品必                                                                

    检,项目主要有感官、净含量、水分。因本标准中对微生物指标做出了强制性规  定,对不同产品的检验项目还需根据具体而定。腐乳出厂检验则还包括氨基酸态                                                                

    氮、水溶性无盐固形物、食盐和大肠菌群;豆豉还需要对大肠菌群进行检验;直                                                                

    接入口的非发酵性豆制品则还要求对菌落总数和大肠菌群进行出厂检验。型式检                                                                

    验则是根据具体情况而定,一般为半年一次。                                                                                                                                    

    六、项目计划                                                                

    1、场地及人员要求:本项目所在地需交通便利,地势平坦,水源充沛,面积                                                                

    1500-2000平方米,工业用电80个千伏安。食品加工属于劳动密集型,需生产                                                                

    管理、技术、工人为80-100人,全部面向社会招聘。                                                                

    2、用水情况:本项目用水量不大,无生产废水,主要废水是生活污水。生活污                                                                

    水水质简单、无毒、无化学添加剂。  3、项目投资:本项目总投资80万元,固定资产投入50万元,流动资金30万元,                                                                

    由企业自筹解决50万元,其余30万元申请银行贷款。                                                                

    4、设备的选型  (1)、主要设备的生产能力应与建设规模、产品方案和技术方案相适应,满足项                                                                

    目投产后的生产或使用要求。  (2)、主要设备之间、主要设备与辅助设备之间的生产能力应相互配套。  (3)、在保证设备满足生产要求的前提下,力求经济、合理、实用。  (4)、设备来源,本项目所需设备全部为新购置,主要包括大豆成型机、面筋成                                                                

    型机、搅拌机、真空机等。  (5)、化验设备:                                                                                                                                                                                                                                                                                                                                                                                                                                                                    

    5、人员配置:                                                                                                                                                                                                                                                                

    根据经营管理的需求,本着高效、精简、合理的原则进行人员配置。以较少的人                                                                

    员,较高的工作效率来保证劳动生产率的提高。                                                                

    为保证项目的顺利实施,达到预期效果,必须使职工掌握生产经营、管理的先                                                                

    进技术和设备操作技能。按"全员培训,突出重点"的原则,重点培训管理人员、                                                                

    技术人员和设备维修、操作人员。通过培训使职工掌握技能,了解企业的生产特                                                                

    点,熟悉企业的生产经营业务,做到持证上岗,实行岗位目标责任制。                                                                

    6、物料的供应条件:本项目主要原料为豆类、面粉等农副产品,从生态种植加                                                                

    工基地(东北与河南荆州)购入,原料供应有保证。                                                                

    7、本项目实施周期:项目从立项报告审批后4-6个月可试运行生产。
